I've been cooking this dish for sometime now and love it as it's easy to cook for a breakfast. I think anything that made from an egg and tomato would be a delicious dish. Healthy and nutritious, this type of food will brighten your morning ♥
You could use a tomato in can or fresh tomato, but my liking is using a fresh tomato. Some would use basil in it, but I didn't because of my preference, just use it if you like basil.
Ingredients :
- 4 medium size tomato (sliced small sized dice)
- 6 eggs
- 1/2 leeks/green onion (as your liking)
- 2 clove garlic (mince)
- 1/2 onion (sliced)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp sugar
- 1 tsp olive oil or vegetable oil
How To:
- Put the vegetable oil or olive oil in a pan.
- Then add the minced garlic with the sliced onion.
- In a lower heat, let the garlic turn into yellow color and the aroma is more stronger.
- Then add the already sliced fresh tomato, or a can of tomato.
- Put the stove into medium heat, add the salt, black pepper and sugar into your taste.
- Simmer for one or two minutes.
- Use a spoon to nudge the tomato base and poached the egg into it. Reply it to another area of the tomato base for the other eggs.
- Put the lid and simmer the pan on medium heat for 7 to 10 minutes until the white eggs solidify. If you want a runny eggs, then turn off the heat, but if you want a cooked yellow then simmer for another 3 minutes.
- Now you can serve it warm in a bowl, sprinkle the thin sliced of leeks or green onion.
- Serve it with any bread that you love, or as a side dish with rice. Enjoy ♥
